What is the recipe for the battered/non battered fried shwimp with skin and head?

Are you familiar with this recipe? This is the recipe they serve at Chinese restaurants.|||Believe it or not, different restaurants have different recipes.





In fact, some restaurants use different recipes according to which cook is on duty.





The chinese restaurant I like best makes fried shrimp about 6 or 8 different ways for lunch. They have a greater variety for supper, but they charge more then, so I go at lunchtime.
